Strawberry “Cream” Pie (with photo)

a.k.a Raw Vegan Strawberry Cheesecake. All those strawberries were inspiring me, so I decided to tweak my recipe for raw vegan “cheesecake” (made from cashews and coconut oil) to include more fruit. I hope it sets up well…

I am really impressed, it will set the coco oil sets the cake when chilled, did you add agave to make it sweet?

I added a little bit of honey. not too much, a little more than 1/4 cup…

Another helpful ingredient is psyllium husk powder (not sure if it can be considered 100% raw – depends on how it is dried I suppose). Raw is fun. It’s a lot easier in the summer, too. Adi and I made some raw strawberry mini-pies the other day
