My First Vegan Cupcakes
November 7, 2008 – 8:23 pmI have never made cupcakes….before today. Growing up, my mom wasn’t, and still isn’t much of a baker. She is an excellent cook, but prefers to make savory foods and make the occasional boxed cake mix if the need arises; so I don’t recall ever making cupcakes as a kid. I used Jenniferschmoo’s recipe for Fluffy White Cupcakes, and this recipe for chocolate frosting.
They were super fun to make, but I learned a couple things. One is, you can’t use whole wheat flour for white cake. It ends up seeming more like muffins. I hate using white flour, and rarely keep it in the house–it is fundamentally against my religion– so WW was all I had on hand. I have used it before for a chocolate cake, and couldn’t tell. So I think it’s a visual thing: the cocoa masks the look of the brown wheat flecks in the flour. Also, I think somehow this time I accidentally didn’t by WW pastry flour, but “fine wheat flour” instead.
All this said, they are tasty, but just a bit too healthy-seeming (watch out folks, that’s prolly the only time you’ll ever see me say something is too healthy. I take it back. there’s no such thing). I will try again another time, and make chocolate instead. I’ll take chocolate whole wheat over vanilla white any time.
