I Missed My Kitchen
August 22, 2008 – 2:02 pmSince the food in Spain was so bad, and since I’m fairly un-busy of late, I have been cooking. I want to eat only very yummy things, and since I can’t afford to eat out every day, I must cook. Early in the spring Hubs gave me a copy of Veganomicon, and I have been putting it to the test– we have been well-pleased. So far this week I have made Chickpea Cutlets with Mustard Sauce (blogged here by Peppertree), Quinoa Salad with Black Beans and Mango (I used a red pepper instead of green, and forgot to buy cilantro), and Snobby Joes (here at the ppk). I made a recipe and a half of the Joes because I was feeling lucky. Hubs doesn’t like calling them Snobby Joes and has decided to call them Sloppy Lenny’s, on account of the lentils; plus, we doused ours in Panola and so can call them different.
In addition to the vcon recipes, on Tuesday I was inspired by a log of polenta to make a Polenta Tamale Pie (blogged here at Vegetarian Family; I omitted the cheese and soy product); this casserole will be incorporated into my repertoire of Go-To recipes…if you can’t think of what to cook, cook Polenta Tamale Pie!
Veganism so agrees with me. You’d think that with all this cooking and eating I would be a humongous monstrosity, but actually I am chipping away at my Spanish-cheese-pounds. Thank God for the thermogenic effect of the vegan diet!…Or maybe it’s because I have been running my ass off lately…
