Fake Mac-n-Cheez Saves the Day

I totally do not want this to be a recipe-based blog (although I do love those too), but I had to post something about Dreena’s Mac-oh, Geez! Hubs is suspicious of anything that claims to be cheesy and isn’t actually, but then he ate a big bowlfull.  A couple of notes: I used whole wheat penne and hemp milk; everything else followed the recipe.

We are having serious flooding issues in our area of the country, and seeing neighbors in my community losing homes and businesses as the floodwaters rise, along with other things going on in the country and world (economic instability, world famine and natural disaster, environmental crisis), has me unsettled. And looking for comfort food. (Yes, I know, this probably doesn’t say good things about my food attachments.)

This Mac turned out scrumptuous, and satisfied mine and Hubs’ craving for comfort food. And it also comforted us to know that we did not hurt or kill any creatures for it, and being free of animal products, our lovely mac-n-cheese has a small carbon footprint (see Earth Day post). We’re trying to make a difference in other ways too, but this is one of the tastier ones.
