Dietary Revisions
June 13, 2008 – 6:32 pmI have been reading more and more about how much good raw foods do the body. So, because I cannot internalize truth without applying it to myself, I have been trying to include more raw in my day. My diet is constantly being revised because I’m constantly reading new things. Here is a rough timeline:
Summer of 04: I start reading books about all-natural, whole-foods, organic diet and begin to make small changes, starting with switching to organic dairy products.
Fall/winter of 04: with the help of a Naturopath, I find I am semi-allergic to soy, and go on an elimination diet. After this, I read voraciously about the relationship between food and health, and get healthier.
05: By now nearly everything we eat is all-natural/whole, much of it organic. After some time, I decide that Nutrition is the field for me.
06: I am reading a lot about how meat-eating affects the environment specifically, but also human health, global
humanitarian issues, and about the meat industry
Summer of 06: I start taking pre-reqs for MS in Nutrition
September of 06: Hubs and I talk a lot about it, and decide together to do a vegetarian experiment for a few months. We feel so good about going veg, we never stop.
Summer of 07: I read The China Study, and cannot ignore the science. Veganism resonates with me on many levels.
Winter of 07: I start paying serious attention to getting at least 5 servings of fruits/veggies per day. This is difficult at first (you wouldn’t think it would be for a vegan, but beans, rice, whole grain toast take up a lot of room), but now I can sometimes get up to 8/day
Spring Semester of 08: I take my first grad-level course in Nutrition
Summer of 08: I am reading up on Raw, and making small changes
