Chewy Chocolate Orange-Ginger Cookies

For our neighborhood party yesterday I made some chocolate chip cookies, just by veganizing the recipe on the back of the Ghirardelli’s bag. I don’t know what I did, but they turned out ugly. Tasted great, looked ugly. I was feeling a bit embarrassed by them.

So I decided to make a version of the Chewy Chocolate-Raspberry cookies from Vcon. I have made these one time before, and I didn’t have raspberry preserves so I used strawberry instead and they turned out great. They are kindof like a slightly berry-flavored devil’s-food cookie. This time I didn’t have strawberry preserves or raspberry preserves, but I did have a jar of St.Dalfour’s Ginger-Orange Marmalade I got as a sample from work, that was sitting in the basement pantry cause it’s too weird to eat with peanut butter. It was the perfect preserve for this cookie recipe. Slightly avant-garde flavor mix: a perfect blend of ginger-spice, sweet orange, cocoa, and almond flavoring. I loved them, and so did my guests. If I ever find more ginger-orange marmalade, I will do a repeat.
