McDougall-worthy Pumpkin Spice Cookies

For all the McDougall-izers (of which I am only half-heartedly, occasionally), here is a cookie that will make your heart happy.  If you want, instead of putting them on a cookie sheet, you can put them in a muffin-top pan.

1 Spice cake mix (this is how my mom does it, but I just mixed up the dry ingredients for a spice cake, which added all of three minutes to the whole process, and a lot of nutritive value in that I used whole wheat pastry flour.  Here they are:

1 1/2 cups flour
1 cup brown sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp allspice
1/2 tsp ground cloves
1 tsp ginger
1/2 tsp salt
1 tsp vanilla (ok this is a wet ingredient, so add it later) )

Then dump in:

1 can pumpkin
1-2 cups oatmeal
1 cup pecans or walnuts

Bake at 350 for 10-12 mins or so, until they look done.  sorry I didn’t really pay attention to how long.

*note: these cookies are very fibrous, and get things going nicely in the right direction.
