ABOUT VEGEATER
I’m a health nut, foodie, and passionate vegetarian. I’m currently putting the finishing touches on a Master’s degree in Human Nutrition (finishing this spring!) from the University of Bridgeport, and hope to become a Certified Clinical Nutritionist soon after. I also work part-time as Lifestyle Educator and Nutrition Counselor for a Rheumatology clinic. I believe, as Berry wrote, that what we eat determines how the world is used. I also believe that nutrition is front-line health-care and disease prevention. What we eat and drink matters – to the health of our bodies, and of the world.
I grew up in the South, where I didn’t meet many vegetarians. Then I moved to the Midwest, where I met a few inspiring ones. In 2006, my husband and I decided to do what we called our “vegetarian experiment”. We never looked back. The more I learn about health, nutrition, agriculture, economics, and the human condition; the more I’m convinced that veg is the best way to eat. If you don’t agree, that’s ok; maybe you’ll have fun experimenting with recipes, or get healthier by adding more plants and fiber to your diet, or listening to me rant about water and exercise.
I don’t foist vegetarianism on my clients or friends (although I do believe that there are many clinical situations when eating a plant-based diet can be very impactful), but I advocate a diet that contains lots of plants (veggies, fruits, legumes, whole grains in moderation, nuts and seeds). I love food. I love everything I eat. And I love talking about it. That’s why I blog — cause I get to talk about the things I think about. So, welcome. Join the conversation.
