you better believe I bought those suckers up. Hubs and I are feasting on Avo and Black Bean Tacos tonight.
...sigh. no, they are not local. not organic. they were grown conventionally far from here and shipped in a refrigerated truck.

Hominy!
Canned hominy has approximately 60 calories and 6 grams of fiber per 1/2 cup serving! That is a lot of fiber in those little kernels. Plus, they taste great! kindof nutty but corny and chewily satisfying. I will definitely be coming up with more ways to use ...
